 INGREDIENTS

1 tablespoon olive oil
two chopped red onions (about four cups)
three garlic cloves, minced
1/2 cup red wine vinegar
one tablespoon minced fresh thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup granulated sugar
one tablespoon brown sugar
two packages mini phyllo shells (15 shells each, such as Athens)
five tablespoons crumbled Gorgonzola cheese

PREPARATION

1. Preheat oven to 350C.

2. Put onions & garlic in olive oil over medium heat, twenty minutes. Stir in next 6 ingredients. Bring to boil; reduce to simmer. Cook five minutes, until most of the liquid has evaporated. Cold.

3. Place phyllo shells on pan; spoon 1/2 teaspoon Gorgonzola in to each. Top with one teaspoon jam. Bake ten minutes & serve.
